Matsato Osuren is a hand-forged Japanese-style chef’s knife engineered with a distinctive index-finger hole to provide unmatched cutting balance, slicing precision, and ergonomic control.
Traditional kitchen knives rely on a standard pinch grip or handle hold that places the hand inches behind the blade's center of gravity. Over extended prep sessions, this leverage gap causes hand fatigue, wrist strain, and accidental slippage. Matsato Osuren solves this foundational culinary problem through structural innovation.
At the core of the Matsato Osuren design is a laser-carved, precision-contoured finger hole positioned right at the base of the blade. By sliding your index finger through the blade, your hand becomes an extension of the knife. This brings the pivot point directly into your center of balance, granting microscopic cutting control whether you are dicing delicate garlic, carving roast brisket, or breaking down poultry.
Each Matsato Osuren knife is forged from premium high-carbon manganese steel (5Cr15MoV alloy) tempered to 58–60 HRC. This rigorous heat-treatment process creates an exceptionally hard cutting core that holds a razor-sharp 15-degree edge significantly longer than ordinary stainless steel department store knives.
The blade surface features a traditional hand-hammered tsuchime textured finish. These dimples create micro-air pockets between the steel and sliced food, preventing sticky ingredients like potatoes, raw meat, and cheeses from vacuum-clinging to the blade during rapid chopping.
The blade is forged with a continuous full tang that extends through the entire length of the ergonomic natural oak wood handle, secured with solid brass rivets for a lifetime of dependable kitchen use.
